Ingredients of Grilled Chicken :
- 1 kg whole chicken meat, cut into pieces, each being 100 grams, (waste of skin)
- 30 grams of onion, puree
- 20 grams of garlic, puree
- 30 grams of nutmeg, puree
- 15 grams of ginger
- 20 grams galangal
- 1 gram of lemon leaves
- 5 grams of lemongrass
- 1 gram of bay leaves (Syzygium Polyanthum)
- 3 grams coriander, roasted
- 2 grams seasoning with chicken flavor
- 1 gram pepper
- 40 grams of soy sauce
- 5 grams of butter
Ingredients of Pepes of Mushrooms Tahu :
- 120 grams of white tofu
- 20 grams of egg white
- 2 grams seasoning with chicken flavor
- 8 grams of red onion, thinly sliced
- 5 grams of garlic, thinly sliced
- 4 grams of lemongrass, thinly sliced
- 1 gram of cayenne pepper, thinly sliced
- 5 grams of red pepper, thinly sliced
- 60 grams of mushrooms, sliced
- 2 grams of basil leaves
Complement :
- Brown rice
- Lettuce
- Tomatoes
- Cucumber
How to cook Grilled Chicken :
1. Saute onion, garlic, and pecans, until fragrant.
2. Add ginger, galangal, lemongrass, lime leaves, bay leaves and coriander seeds.
3. Cook for two minutes over medium heat, add salt and pepper.
4. Add the chicken meat, add water, stir, and cook for 30 minutes over low heat, until the chicken is cooked, set aside.
5. Grilled chicken over charcoal, basting with soy sauce mixed with butter.
How to cook Pepes of Mushrooms Tahu :
1. Puree tofu, then mix with other ingredients.
2. Enter the ingredients in a small container, steamed until cooked.
Serve the grilled chicken with warm brown rice, tofu steamed, lettuce, tomato, and cucumber.
