Ingredients :
- 500 grams of pomfret
- 1 piece of lime
- 1 teaspoon of salt
Fish seasoning (mix well) :
- 5 pieces of red onion, chopped
- 3 cloves of garlic, chopped
- 2 pieces of pecans, puree
- ½ teaspoon pepper
- 2 cm of ginger, puree
- 1 teaspoon of salt
Mango sambal :
- 50 milliliters of water
- 2 pieces of red chilli, mashed
- ½ teaspoon of salt
- 1 tablespoon of granulated sugar
- 100 grams of tomatoes, grated
- ½ teaspoon cornstarch, dissolved in a little water
- 150 grams of mango, finely grated
Tomato sambal :
- 100 grams of green tomatoes, sliced into cubes
- 6 pieces of cayenne pepper, thinly sliced
- 4 pieces of red onion, thinly sliced, chopped
- 2 tablespoons of sweet soy sauce
- ½ teaspoon of salt
Sesame sambal :
- 25 grams of sesame seeds, toasted
- 2 tablespoons of lemon juice
- ½ teaspoon of shrimp paste
- 1 tablespoon soy sauce
- 50 grams of tomato, seeded and roughly chopped
How to cook Grilled Pomfret with Various Sambal (Bawal Bakar Aneka Sambal) :
1. Marinate the fish with lime water and salt, until smooth.
2. Grilled fish while smeared with herbs, roasted until the top and bottom of the fish was overcooked. Set aside.
3. Mango sambal: Cook together, water, fine chili, salt, sugar, grated tomatoes, cook together until boiling. Enter cornstarch, stirring until thickened. Insert the already shredded mango and stir well.
4. Tomato sambal: Mix tomato sambal and stir well.
5. Sesame sauce: Mix all ingredients sesame sambal and stir well.
