Ingredients :
- 1 kg of chicken, cut into small pieces
- ½ pineapple, cut into small pieces
- 500 ml of coconut milk
- 2 tablespoons of grated coconut, roasted
- Brown sugar to taste
- Soy sauce to taste
Seasonings, mashed :
- 2 tablespoons of coriander
- 2 teaspoons of salt
- 5 cm galangal
- 3 cm turmeric
- 3 pieces of hazelnut
- 5 pieces of red onion
- 5 cloves garlic
- 7 curly red chilies
- 1 teaspoon of pepper
- ½ teaspoon of cumin
- 1 cm cinnamon
How to cook Coriander Seasoning Chicken :
1. Saute ground spices with grated coconut, toasted until cooked.
2. Add chicken, stir until it changes color, add the coconut milk, cook over low heat.
3. Once bubbling, put pineapple, brown sugar, and soy sauce. Cook while stirring occasionally until thickened.
